Pre-heat the oven to 110°C, 225°F, Gas Mark ¼, remove the lemon peel from the lemon using a vegetable peeler. Place the peel on a baking sheet and bake in the oven for 3 hours. (For best results, leave the lemon peel in oven overnight to completely dry out.) Crush the dried peel in a mortar and pestle or grind in a clean coffee grinder.
Mix the lemon peel powder, matcha green tea powder and the Ground Ginger together until well blended.
Store in a tightly covered jar in a cool, dry place.
