Place the wasabi peas, bonito flakes, nori, Sea Salt, sugar and Cayenne Pepper into a food processor. Pulse until the mixture is well blended and powdery. Transfer to bowl.
Toast the Sesame Seeds in a dry frying pan on a medium heat for about 2 minutes or until lightly toasted, stirring occasionally. Immediately toss with the wasabi pea mixture and leave to cool completely.
Store in tightly covered jar in a cool, dry place up to 1 month.
