2 egg yolks
1 tbsp cider vinegar
1 tsp dijon mustard
200 ml sunflower oil
50 g Schwartz crispy fried onions
1 lemon, juiced
pinch sea salt flakes
Procedure
Crush the Crispy fried onions in a pestle and mortar and set aside.
Whisk the egg yolks, vinegar and mustard together in a medium bowl, slowly pour in the sunflower oil as you whisk until you have a smooth emulsified mixture.
Then stir in the crushed crispy fried onions.
Finish with the lemon juice and salt to taste.
