- X2 Waffles
- 250 g Bacon Chop rubbed in Old Bay ® Seasoning
- 1 Yellow Bell Pepper
- 1 Chilli
- 1 Red Onion
- Lime
- Charcoal Salt
- Half a Garlic Bulb
- 4 Marinade Bag Medium Vine Tomatoes
- Fresh Coriander
- Avocado
- 2 Slices of Pineapple
- Cholula ® Chipotle Hot Sauce
Procedure
FOR THE BACON:
- BBQ the Old Bay Charcoal Salt rubbed bacon chop to 65°C and leave to rest.
FOR THE SALSA:
- Dirty cook the pepper, chilli, red onion and tomatoes for about 25/30 mins until soft.
- Remove the outer skin of the onion and garlic but leave the char and ash on the other veg.
- Chop the ash veg roughly with coriander, lime juice and salt.
- Add diced avocado and season with charcoal salt.
WAFFLE BUILD:
- Lightly BBQ the waffles.
- Slice up the bacon and stack on top of the waffle.
- Spoon on the salsa and top with a slice of the grilled pineapple.
- Drizzle with Chipotle Cholula and maple syrup to finish.
