Servings 4 8 24 48 80 100 Serves 4 1 kg day old roasted potatoes, diced 2 onions, chopped 3 mixed peppers diced 12 beaten eggs 200 g grated orange and yellow cheese 100 ml Cattlemens ® Kansas City Classic BBQ Sauce Bunch of coriander to finish Procedure In a cast iron skillet, fry up the potatoes along with the onions and peppers until golden with a little veg oil. Once golden, season and pour in the eggs, take off the direct heat and finish indirect for 5-8 minutes. Add in the grated cheese and bake for another 3 minutes.
