Dirty cook on the BBQ for around 8 mins until the internal temperature is just over 55°C.
Allow the steak to rest.
Add the flour and butter to a pan and heat until combined.
Slowly mix in the milk. Add the smoked cheese and a few splashes of Cholula at the end to thicken.
Add in the pre-cooked macaroni.
Slice the rested steak.
Cut the baguette length ways and add a layer of mac ‘n’ cheese
Lay the steak over the mac ‘n’ cheese and top with gherkins and a handful of watercress and rocket. Add more mac ‘n’ cheese and steak on top, season with charcoal salt and drizzle with Cholula Mayo.
