Setup a kettle smoker with a little smoking wood, one third coal bed. You will need a large casserole pot.
Marinade the beef in Cattlemen’s sauce for half an hour. Put onto smoke on the kettle grill for 20-30 minutes to build up the cattlemen's caramelisation. Add in a little smoking wood to give you that smoky flavour.
While the beef chunks are smoking, prepare your veg and soften in your pot for a few minutes. Soften the veg in the pot along with the herbs for 5-10 minutes, add in the smoked beef along with the red wine, chopped tomatoes and stock.
Bring up to a simmer and slowly bubble away over the coal bed for 2-3 hours until the beef is tender. Check the seasoning and serve with some chunky sourdough bread.
