Heat the oil in a large wok or deep frying pan, add the chicken and stir fry for 2-3 minutes. Add the peppers, onion and Schwartz for Chef Fajita Seasoning and cook for a further 6-8 minutes, until the vegetables are beginning to soften and the chicken is fully cooked.
Meanwhile warm the tortillas through. Place one tortilla on a plate, layer with chicken and vegetables, another tortilla and more chicken and vegetables. Top with some grated cheese and grill until the cheese has melted.
Serve with a fresh green salad, sour cream and guacamole.
